Here’s a super yummy dip to make for home, or to bring to parties or celebrations. This lighter version of hummus, without the heaviness of cooked garbanzo beans, is sure to please.
Our dear friends Dan and Charm have made this recipe for us on more than one occasion from a recipe in RAWvolution, and we always loved it. We made a few alterations, adding in curry for a warming spice, and cut back on the amount of fats, and other ingredients.
Enjoy this recipe with crudités, or with our raw Pumpkin Seed Bread—just delicious!
Ingredients: Serves 4
3 cups zucchini, chopped
6 tablespoons tahini
1/4 cup lemon juice
2 tablespoons olive oil
4 tablespoons green onions, finely sliced
1 and 1/2 teaspoons curry powder
3/4 teaspoon cumin powder
1/4 teaspoon Himalayan salt
1 clove garlic
Parsley, chopped (use for garnish, then mix in)
Crudités: celery, carrots, or other veggies for dipping
Chop zucchini, and put into food processor.
Add all remaining ingredients and process until creamy smooth, about 3 minutes.
Transfer to individual dipping bowls, or one large serving bowl.
Diagonal slice carrots, cut inner celery stalks into 3-4 inch sections.
Or prepare cucumber, broccoli, jicama, etc., for dipping.
Add parsley garnish.
Arrange veggies on individual plates with dipping bowls, or one large platter for guests to self serve.
The Little Story: Emotional DetoxAwhile ago, I was hit with some not very pleasant emotions—anger, sadness, and a lack of appreciation for life. The thing that bothered me the most was the inability to feel gratitude, and to know that my heart was closed. Fortunately, it didn’t last too long, and when I was able to move forward I breathed much more freely.
It’s well known that emotions can be "in there" for a long time until something acts as a trigger to push them to the surface. When this happens I have a choice—allow myself to become overwhelmed by the feelings, or to take a different approach.
This is what I decided to do: I spent some time in silent contemplation, connecting to spiritual essence, Source. I used various sayings when the feelings snuck back in (they were tenacious!) , such as, May the blessings be, Thy will be done, Thank you (that was a stretch to actually thank that which was making me unhappy), and, This too shall pass.
For a couple of hours I had to say these things again and again. Yet every time I did, I could feel a small shift as the "stickiness" of the feelings began to release. A little bit of wiggle room opened up that allowed positive energy to trickle in. And after awhile, I felt such relief when a smile spontaneously lit upon my face. Progress, yes!
Other practices that help me work through emotional detox are baths, through the soothing and healing properties of water, walking in nature, yoga, deep breathing, and nourishing food. Talking with a trusted friend is also deeply beneficial, and just to have someone listen is a blessing. (Thank you, Lillian, for the beautiful figurines. They have graced our home for years, and always remind me to share and listen from the heart.)
Emotions are energy, and negative feelings have a definite effect on overall health and well being, literally causing the body to become more acidic, which makes us feel even worse. Stressful emotions can also be a signal that the body needs nutrients at a deep cellular level, and for Rex and me, fresh juices always make us feel better within minutes—as well as hydrating and alkalizing our bodies. Juice is one of the highest form of purified water, filled with vitamins, minerals, enzymes, phytonutrients and more, with immense health benefits.
I think the bottom line is this: We all have an innate ability to use our creativity to find new solutions, to help us change and move through difficult times, and to gain a fresh perspective that leads to deeper healing and increased energy. After a cleansing I always feel lighter and so much more joyful.
