It’s light, refreshing, tangy, delicious, and fun to eat. The zucchini is spiralized to make long strands of angelhair pasta which are then combined with fresh tomatoes, carrots, green onions, garlic, and herbs, then tossed with a yummy lime dressing. Serve with guacamole, or seed cheese, or greens for a more substantial meal.
Ingredients: Serves 2 2 cups zucchini, spiralized 3/4 cup fresh ripe tomatoes, chopped 1/2 cup carrots, grated 4 tablespoons green onions, minced 1 tablespoon Herbs de Provence 12 cilantro leaves, optional (Salt, pepper, and garlic are in the dressing.) Directions Wash zucchini, and remove any bad spots, but leave on skin. Cut into 3 inch chunks. Put into a Saladacco on the angelhair pasta setting. Transfer to a large bowl. Add carrots, tomatos, green onions, cilantro, and herbs. Mix well. Lime Dressing 2 tablespoons fresh lime juice*. 3 tablespoons olive, or Spectrum walnut oil 1/4 teaspoon Himalayan or Celtic salt 1 clove garlic, peeled and pressed Freshly cracked black pepper to taste Mix ingredients in bowl until velvety smooth. Pour over salad. Toss well to evenly coat ingredients. *Note: We just got a Lemon/Lime Press. They're the greatest tool to get out every drop of juice. The cost of the press will be paid back within six months because we're getting so much more juice. To use, put half a lemon or lime fleshy side down, and press. A Little Story: Raw Food Weekend

As some of you may remember, years ago Rex and I used to make Fridays our raw food day. This soon expanded to where we could go raw for several days at a time. Lately we've been trying to make Fridays a juicy feast day, where we drink liquids all day. These meals can take the form of juices, smoothies, or even blended soups. This regime is helping us to break up old habits, and it feels wonderful.
